Winter has finally hit North Carolina, so it’s officially soup season for me. Warm comforting soup is great for this time of year. It’s great for lunch, dinner, or even a snack. Best part is, it takes very little of my time, which is amazing because I’ve been crazy busy so far this year. But one of my resolutions was to make sure I spend more time doing things I love, so I’m making 1 new recipe every week this year & I’ll share it every Sunday.
This week I’ve decided on Chicken Tortilla Soup. I found this recipe on Pinterest (my other obsession) and made a few tweaks, but you can find the original here.
- 4 uncooked boneless, skinless chicken breasts
2 (15 oz) can diced fire roasted tomatoes, undrained
1 (10 oz) can red enchilada sauce
1 (15 oz) can black beans, drained & rinsed
1 (4 oz) can chopped green chile peppers
2 cloves garlic, minced
1 package frozen corn (about 20 oz)
1 (32 ounce) box low sodium chicken broth
2 tsp cumin
3 tsp chili powder
1 tsp Johnny’s season salt
1 tsp pepper
2 Tbsp ground flax seed
1 bay leaf
2 tsp hot sauce
- Place chicken, tomatoes, enchilada sauce, black beans, hot sauce, green chiles, corn and garlic into your crock pot. Pour in chicken broth, and season with cumin, chili powder, salt, pepper, flax seed, and bay leaf. Cover, and cook on Low setting for 6 to 8 hours or on High setting for 3 to 4 hours.
- When fully cooked, pull chicken out and shred. Place back inside crock pot.
- Sprinkle tortilla chips on top. ENJOY!!
